5 Ultimate Gluten Free AND Vegan Chocolate Cake Recipes


This is the ultimate vegan chocolate cake for those who aren’t a fan of sticky, sugary confections

Vegan chocolate cake isn't usually the first thing you might think of when you know that January is traditionally a time of restraint and restriction as we all try to shed the festive pounds and keep to our New Year’s resolutions.

This year though, record numbers have turned to Veganism, using programmes like Veganuary, to try and create a healthier lifestyle in a tasty way.

With the multiple health benefits of a vegan diet well known, we figured there was room to put one major treat back in: vegan chocolate cake!

As those of you unlucky enough to have a dairy intolerance will know – not eating eggs or dairy does NOT have to mean an end to all treats forever.

We took on the challenge of finding the very best vegan recipes out there, including one created by our founder Abi’s daughter for her best friend, which is also gluten free.

You can of course make any of these recipes gluten free too, by opting for a wheat-free flour from brands like Dove's Farm.

Vegan chocolate cake from claudia Claudia's Cake!

Claudia’s Perfect Chocolate Cake:

This is Abi’s daughter Claudia’s gluten free vegan chocolate birthday cake recipe. Although not vegan herself, Claudia makes every year on her birthday so her best friend - who is vegan - doesn’t feel left out! It’s adapted from a recipe in Isa Chandra MoskowitzVegan Cupcakes Take Over the World.

Ingredients:

  • 375ml organic soy milk
  • 5 tsp organic apple cider vinegar (try Biona, Raw Health or Aspalls)
  • 100g organic sugar
  • 40g sunflower oil
  • 5 tsp vanilla extract
  • 70g organic gluten-free self-raising flour (try the range at Dove’s Farm)
  • 15 organic cocoa powder (like Green & Black’s)
  • ¼ - ½ tsp salt

Directions:

  1. Preheat oven to 170 degrees. Grease and line an 18-20cm cake tin.
  2. Whisk together the soy milk and vinegar and leave for a few minutes to curdle.
  3. Add the sugar, sunflower oil and vanilla extract then beat until foamy.
  4. Weigh all the other ingredients into the bowl and stir in until smooth.
  5. Place in the preheated oven. Check after 25 minutes with a fork to see if it comes out clean – leave up to 10 mins longer to bake fully. Remove from oven then turn out onto a cooling rack after 5-10 mins.
  6. Decorate by pouring over melted dark chocolate and vegan 100’s and 1000’s or by dusting with icing sugar.
